About FRESH™ Andechs
FRESH™ Andechs is your go-to lager strain for making a variety of easy-drinking classic styles, including helles, pilsner, and dark lagers. It's low sulfur, low diacetyl, and easy to harvest and repitch. FRESH™ Andechs is a brewery workhorse.
Receiving and Storage
Once you receive the yeast, take the cube containers out of the box and place them in the fridge. If there is any swelling of the containers, simply crack the lid and press on the container to degas, and quickly reseal the container while maintaining positive pressure. We recommend receiving the yeast the day before you brew. Use the yeast as soon as possible. After 1 week, the yeast may lag. After 2 weeks, there could be other negative effects.
General Recommendations
Knockout Temperature: Chill your wort to the mid-60s°F, or your preferred temperature.
Aeration: Target an oxygen level of 1 ppm per degree plato for optimal yeast performance.
Pitch Rate:
- <18 °P → 1,500,000 cells/mL/°P
- 18–20 °P → 2,000,000 cells/mL/°P
- ≥21 °P → 2,500,000 cells/mL/°P
Fermentation Temperature: The temperature range varies by style:
- Cold IPAs and West Coast Styles: Use a higher temperature, from 58°F to 62°F .
- Lagers: Ferment lagers at your preferred temperature. You can ferment as low as 48°F, or as high as 58°F
- Note: 52°F is a good starting point for your first fermentation. FRESH™ Andechs is extremely clean and low sulfur producing across a wide range of temperatures.
- Alcohol Tolerance: 12%
Temperature Increase: When the beer has reached 55–60% of its target terminal gravity, increase the FV set point temperature several degrees. Allow the temperature to free-rise naturally to promote better attenuation, ensure a complete fermentation and to blow off any residual sulfur.
Because FRESH™ Andechs has built-in diacetyl-reducing abilities, no diacetyl rest is needed, and you can skip the temperature ramp if desired.
Once terminal gravity is reached, you can cold crash and enter the lagering phase. You may either cold crash straight away to your target temp, or ramp-down, depending on your preference. Side note: you can expect to reach terminal gravity in 7-10 days. We have clients that are in package within two weeks from pitch!
Drauflassen/Multiple Turns: If brewing multiple batches in succession into one tank, aerate each knockout to promote yeast growth.
Genetic Drift of ALDC: ALDC production does not change over time. The yeast will continue to effectively reduce alpha acetolactate for many generations. FRESH™ strains are genetically stable.
